I've found that, if one doesn't want the alcohol to boil away, you can first heat spices and other liquid separately, then reduce heat and add the wine at the end.
For once, I have to say i ended up disappointed, much as I love the Alps and all they have to offer. I got as far as the bit about the author dressed as Scary Spice and was frantically looking for the photo...in vain! And, frankly, I don't believe it doesn't exist!!!

Murren is a great place for a winter walking holiday too. We were there last year, walked for miles!
